Don’t be – dry processing refers to the method of removing the seed (bean) from the fruit after harvest. Dry processing generally results in a more rustic, earthy cup, in addition to whatever unique character the bean itself possesses. Once the dry processed bean is in hand, they soak in it water to remove the caffeine. Got it?
