Ethiopian Natural Sidamo Guji. I can’t get enough of this one. I tried coming up with an espresso featuring this bean, but nothing deserves to be paired with it – it is an incredible single origin espresso, and phenomenal in the press pot, too. I’ve experimented with lots of different roast levels on this one. It’s interesting, over a wide range of finish temperatures the visual appearance is unchanged, but the flavor profile is radically altered. For my buds, a light to medium roast – just a hint of second crack at about 440F – cannot be beat.
